Located in the heart of the agave landscape of Amatitán, Jalisco, in the Valles Region, our distillery brings together the heritage of traditional methods and the precision of modern processes that ensure quality and consistency, giving life to Mexico’s most iconic spirit: Tequila.

Harvest

Throughout each growing cycle, our Jornaleros patiently nurture more than 20 million Blue Agave plants, caring for their development day after day while respecting the rhythms of the land and the time each plant needs to reach maturity.

Their perseverance transforms into art when the Jimadores arrive to harvest the Blue Agave, removing the stalks to obtain the heart of the Agave “piña.”

The Agave piñas are cut in half to begin their transformation. Under a constant flow of steam—between 90°C and 98°C—our traditional masonry oven, lined with clay, begins a slow and essential process.

Over the course of several hours, the raw Agave develops its natural sweetness, its texture softens, and its sugars become concentrated. This careful cooking process allows us to separate the liquid from the first boil and preserve the most delicate notes of the cooked Agave, which will later reveal themselves through the Tequila’s aromas, flavors, and smooth mouthfeel.

Extraction

Tradition is preserved during extraction. Using the tahona, also known as a volcanic stone mill, we extract the essence of the Agave.

As the stone wheel moves slowly and steadily over the cooked Agave fibers, water sourced from the volcanic aquifers of Amatitán is gradually added, allowing us to obtain Agave juices rich in natural sugars that will play an essential role in fermentation.

Here begins the evolution toward our emblematic spirit. The juices extracted by the tahona are transferred into our fermentation tanks, exposed to the air of Amatitán, where the must is left to rest as the natural, wild yeasts present in the local environment quietly begin their work, transforming sugars into alcohol while enriching the must with aromatic complexity.

As a signature of our distillery, we incorporate Agave fibers from the tahona during fermentation, adding distinctive aromas and flavors that contribute to truly unique Tequila profiles.

Double distillation in copper pot stills

Copper pot stills are at the heart of our distillation process. During the first distillation, Agave bagasse is incorporated into the still.

A second distillation further refines the spirit, revealing the intense aromas and distinctive notes of an artisanal 100% Agave Blanco Tequila.

Within our tequila cellar of more than 2,000 m², our barrels rest under optimal climate conditions, providing each Tequila with the ideal environment and time required for proper maturation.

Based on a desired profile, the Blanco Tequila obtained through distillation is aged in American or French White Oak barrels, where time and wood gradually shape its character, transforming it into Reposado, Añejo, or Extra Añejo Tequila.

Bottling

Bottling is the final chapter of a story that began in the land. Each expression—Blanco, Reposado, Añejo, or Extra Añejo—takes its final form at this stage.

The attention and care devoted to this process are brought to life by the skilled hands of our people, who work with dedication to ensure excellence in every bottle. Each bottle that leaves our distillery is ready to bring a distinctive spirit, crafted with purpose, to people around the world.
