Our distillery, located in the heart of the Agave landscape, Amatitán, Jalisco, In the Valley Region, we have more than 20 million Agave plants, which are cared for and harvested until they are ready to be juiced to obtain from them the emblematic spirit of Mexico, Tequila.
Our distillery, located in the heart of the Agave landscape, Amatitán, Jalisco, In the Valley Region, we have more than 20 million Agave plants, which are cared for and harvested until they are ready to be juiced to obtain from them the emblematic spirit of Mexico, Tequila.
From day one until maturity, our laborers take care of the Agave plants with care and dedication in each planting cycle. Their perseverance transforms into art when the “jimadores” arrive to harvest the Blue Agave, removing the stalks to obtain the heart of the Agave “piña.”
We divide the heart of the Agave “piña” into halves and place them inside the masonry oven covered with clay, where they will be slowly cooked with steam at a temperature of 90ºC to 95ºC; which will give rise to an Agave with better texture and a concentration of natural sugars, we always take care to maintain sweet and fruity notes of the cooked Agave that will be reflected in the aromas, flavors, and smoothness of the distilled product.
The tradition is preserved in the extraction because, with the Tahona or also known as the stone mill, we extract the richness of the Agave with the slow and rotating passage of the stone wheel over the cooked Agave fibers and the gradual flow of water extracted from the volcanic water mantles of the Amatitán area. Thus, obtaining Agave juices rich in sugars will be essential to the fermentation process.
The experience of our Master Distiller is key to conceiving exquisite Tequilas to the palate of consumers; copper stills are our primary tool to perform our first distillation with bagasse inside; in a second selective distillation, we obtain intense flavors and aromas of a Tequila Blanco with artisanal character.
Each Tequila has its personality, and in our distillery, we focus on accentuating the characteristics that provide the style to each of our profiles. Thus, in our tequila cellar of more than 2,000 m², we house barrels in optimal climatic conditions that guarantee the proper rest of the Tequilas for their maturation.
According to the definition of the profile, the Tequila Blanco obtained in the distillation process is poured into American White Oak or French White Oak barrels to be transformed into Tequila Reposado, Añejo, and/or Extra Añejo.
Each Tequila has its personality, and in our distillery, we focus on accentuating the characteristics that provide the style to each of our profiles. Thus, in our tequila cellar of more than 2,000 m², we house barrels in optimal climatic conditions that guarantee the proper rest of the Tequilas for their maturation.
According to the definition of the profile, the Tequila Blanco obtained in the distillation process is poured into American White Oak or French White Oak barrels to be transformed into Tequila Reposado, Añejo, and/or Extra Añejo.
Thanks to the Blue Agave, which with its surprising and extraordinary metamorphosis from beginning to end, gives us its harmony, essence, and sweetness, we have a 100% authentic Agave spirit from Mexico to delight the world with its imposing flavor, body, and aromas.
